When you're talking about those kind of pressures, you're in the area of a "water jet cutter". Water(or hydraulic fluid) under high pressure can cut through steel...so the human body is butter. Hydraulic technicians always use a target material to check for leaks...as a fine stream is like a knife. A person would need to be outfitted with some serious "armor" to be safe. Pressure washers for yard/car/house shouldn't really be allowed to pressurize water that high. Your story could prevent a lot of injuries in the future...best wishes for a full recovery.
